Holiday Baking

I’m still undecided about how much holiday baking I’m going to do this year.

I want to keep the traditions alive, but, honestly, I’m not feeling the motivation or desire to spend a lot of time in the kitchen baking right now. Maybe this will change as the holidays grow nearer, maybe not. I’m going to take it one day at a time. We certainly don’t  need a plethora of sweets in the house, although I want to have my usual holiday goodie bags for our friends (and the kids’ teachers) – it’s just so busy at work these days I’m not sure I’m going to have the energy or time to do the baking in the evenings like I’ve done in years’ past!

I have a back up plan, though, that I’m going to try out this weekend, just in case baking falls by the wayside for holiday gifts. After I try it out, I’ll let you know how it went.

I thought that today I’d share with you some of my favorite cookie recipes. Since this is the time of year when a lot of us are invited to holiday cookie swap parties, I thought it might be fun to share some of our favorites.

If you have a favorite cookie recipe, please share in the comments! I am sure the rest of us would love to try something new!

Here are some of our holiday standbys:

What about you? What cookies mean Christmas to you?

Oh, and I just discovered this new online magazine: FoodieCrush.  They have some beautiful food shots and some even yummier cookie recipes!

Scrapbook Tuesday

Well, I’m caught up on my Project Life album!

Mostly, anyway.

img_0930

I went on a “retreat” this weekend with a  girlfriend and spent about twelve hours on Saturday working on my album.  I got May – November pictures in the pages (which included sorting through a TON of memorabilia, school papers, etc. and photos) and I’m now in the process of catching up on the journaling.

img_0931

The pages are not fancy – but they are done. And right now, I’m happy with that. I’ll be supplementing with some digital pages I’ve done so the “fancy” will come with that.

img_0932

I have to say, though, every time I do a Project Life/Project 365 album (this is my third year) I get discouraged about mid-year and slack off.  Then I pick up steam again whenever I get a scrapbook weekend to catch up and I remember why I love this concept so much.

img_0933

I love being able to snap those everyday, mundane things that make up our lives and that I wouldn’t necessarily dedicate an entire scrapbook page (and subsequent supplies) to but that really capture what our life is like right now… what is important to us, what captures our fancy, where we are spending our time.

img_0934

I’m also planning to add in some printouts of my blog posts that correspond with some of the pictures – why re-write all of that? Why not just include it here? After all, I figure my blog is my online scrapbook!

img_0935

I also really love how QUICKLY it comes together (once I sit down and actually DO it!)  I remarked on Sunday morning that I wish I had the discipline to actually do the work on a weekly basis when the memories are fresh and stay caught up.  Alas, that never seems to happen. But, my current method of using an iris project holder to keep my memorabilia and ephemera works pretty well.

img_0936

Last weekend, I just dug around in that, put things in chronological order, slipped it into the appropriate page protectors or pockets and then filled in with photos and journal boxes after that was done.  It works well for me.

img_0937

It also frees me from feeling like I have to do my “normal” scrapbooking chronologically.  Now that I do that mostly digitally, I like being able to bounce around where the inspiration strikes and having my PL album chronological frees me from feeling like I might miss something by jumping around with my other pages.

img_0938

I’ll share some more pages in the coming weeks – I didn’t want to post 100 pages today – that would be rather boring, I think. Smile

Menu Plan Monday ~ 5 December

Happy Monday!

I’m back in the groove today after spending the weekend with my girlfriends – relaxing and scrapbooking in the mountains. *ah* It was a great weekend. Very refreshing.

now, on to the craziness of Christmas!

This week, I’ve kept the menu simple.  Favorites I know everyone will like and that are easy to prepare.

  • Monday: Spaghetti w/ garlic bread
  • Tuesday: Fajitas
  • Wednesday: Chicken & Rice
  • Thursday: Asian Chicken Stir Fry
  • Friday: either eat out or steak & baked potatoes (a special treat!)
  • Saturday: Pizzas
  • Sunday: dinner out (maybe) or baked chicken

That’s it! Sweet and simple.  What about you?

Christmas decorating

We’re getting the decorations up around here – did most of them on the weekend after Thanksgiving and the rest are slowly finding their way to the appropriate places…

The tree was finished on Monday night. SuperMan and Little Bit started things off with the ropes

img_0919

and then Big Girl came in to help with the ornaments.  I “supervised” and handed out ornaments (and attached those pesky hangers) to them as they were ready.

We’re getting there… now I just need to finish my shopping!

Up to mischief

We have an elf who comes to visit us every year around this time.

You may recall me mentioning him last year?

Well, he’s back.

That little manager of mischief.

Jingle the Elf.

He’s been having lots of fun around here the past week:

  • He welcomed himself back to our house with a hug from the angel that tops the tree in the family room.
  • And moved into the dining room to sneak some candy canes.

img_0671

  • Then, he rode around the mantle on our reindeer
  • and moved into the sun room where he found another reindeer to play with.
  • Wednesday, he was on the table playing checkers.

And this is what I found this morning.  Ahem.

There’s no telling what he’ll be up to next.

Teriyaki Chicken & Fried Rice

I mentioned on Facebook last night that I’d made an absolutely awesome teriyaki chicken and fried rice recipe.  I thought I’d share it with you today.  Unfortunately, there were not enough leftovers to get a picture to show you, and in the hustle of getting food on the table, I totally forgot last night. Sad smile

But it tastes awesome. I promise.

This is one of those easy weeknight dinners, too. I think I had it on the table in less than 30 minutes. Two recipes… make them separately if you wish, or serve them together like I did.  The girls preferred plain white rice to the fried rice, but they don’t know what they were missing. That was the best part of the dinner to me.

Teriyaki Chicken

For the Teriyaki chicken, the base was just as simple as can be – chicken thighs marinated in a teriyaki sauce.  I used Veri Veri Teriyaki.  It is an all natural teriyaki and I love the flavor it has.

I started out with frozen thighs, so I marinated the partially-defrosted thighs for about an hour in a Tupperware with about 1/2 cup of this sauce.  Then I cut the thighs into bite-sized pieces and put them back in the marinade to soak for another half hour or so. I find that chicken is easier to cut into small pieces when it’s partially frozen.  Less slippy-slidey that way.  This is something you could easily skip and just marinade/defrost the chicken in a Tupperware in your freezer while you’re working during the day.

Once I was ready to cook the chicken, I just put some olive oil and about 1 tsp of sesame oil in a hot skillet. I sautéed the chicken (marinade and all) until it was cooked (about 10 min) and let it simmer until the water cooked out of the marinade. I was left with a nice, shiny glaze on the chicken.

In a separate pot, I cooked about 1 cup of rice.

For the girls, I served a small bowl of the rice with a serving of the chicken on the side.  Fruit rounded out their meal.

Fried Rice

2-3 cups (cooked) rice
1/2 bag frozen vegetables (I used Publix Japanese Blend)
1 tsp minced garlic
1 tsp sesame oil
1 Tbsp olive oil
Soy Sauce (about 2 Tbsp)
Emeril’s Asian Seasoning (you could also use Chinese Five Spice Powder)

In a large skillet, heat the oil. Once oil is shimmering in the pan, put your rice in and stir to heat through.

Add your soy sauce (to taste) and the frozen vegetables, heating through. I covered the pan while the veggies thawed and this helped to use the steam to moisten the rice a little more (I was using leftover rice)

Let this cook for 5-7 minutes, stirring frequently.

Add the garlic and sprinkle generously with Asian Seasoning.

Serve with the Teriyaki chicken. YUM.

*********

I just realized the Asian Essence I reference above (Emeril’s) is no longer available (mine is old, I guess!) but here is a recipe you might try – the source says it is from Food Network, but I could not find it there to link you directly to it. It looks pretty close, though, and like I said before, you could just use Chinese Five Spice Powder and be good to go.

Emeril’s Asian Spice Blend:

1 tablespoon 5-spice powder
1 tablespoon salt
1 tablespoon sugar
1 1/2 teaspoons ground black pepper
3/4 teaspoon cayenne

In a small bowl, blend all the ingredients. Keep in an airtight container until ready to use.

Scrapbook Tuesday

I didn’t get as much scrapbooking done during the holiday as I had thought I would. Actually, I just wasn’t feeling the creative burst to do so… That, and I know I’ll be doing a LOT of scrapbooking this coming weekend, so I focused more on other things (like knitting and reading and hanging out with the girls) than on scrapbooking.

I did manage to get one page done –

2011 Family Album (4.0) - Page 035

I think it turned out well – and it captures a sweet moment with Little Bit and me that I didn’t even know SuperMan took a picture of.  This was at the cabin in North Carolina when we met my mom and stepdad up there for the weekend.

I’ll have lots more to share next week, I’m sure!

Menu Plan Monday

Wow! It’s the HOLIDAYS already!

When did THAT happen??

One minute, you’re sunning yourself by the pool and the next time you look around people are singing Christmas carols and putting up lights.

Sigh.

I hope those of you in the U.S. had a most wonderful Thanksgiving week.  We had a very nice week ourselves.  I am happy to report that I managed to stay at home for four straight days. Yep, I didn’t even go past my mailbox for that entire time! It was absolute heaven! If I could figure out a way to have everything delivered, I could quite happily stay at home indefinitely.

My family (especially Super Man and Big Girl) are not of the same mindset, though, so Little Bit and I have to leave the compound occasionally, much to our chagrin.

This week, we’re gearing up for the Christmas festivities. The trees are up and waiting for decorations.  The lights are up outside and most of the other décor is out and ready to enjoy.

Jingle the Elf made his debut on Saturday – the girls were thrilled.  He’s already been up to mischief and found  his way into a bowl of candy canes on Saturday night.

IMG_0671[1]

Today he was found riding the reindeer on the mantle.  There’s no telling what else he’ll get into before Christmas!

It’s rainy and cold here in our little mountain town.  Supposed to get snow tomorrow – which is amazing since we never usually get snow before January.  They are saying it most likely will not stick, but the girls are thrilled regardless.

With the cold weather, I’m planning some warm, hearty meals for us this week.  I want to be sure everyone’s tummies are filled and happy as we enter these long dark days of winter.

mpm-1

Here’s what we have planned:

  • Monday: Roast Beef (crock pot) and mashed potatoes. Also eating up the rest of the Thanksgiving veggie leftovers.
  • Tuesday: Crock Pot Meatloaf & potatoes
  • Wednesday: Teriyaki Chicken & Fried Rice
  • Thursday: Salmon Croquettes & Grits (SuperMan’s request)
I’ll also be making some Pasta Fagioli soup to take with me on a girls’ weekend.
  • Friday: SuperMan and the girls will (probably) eat out, but I have the fixin’s for Tacos if they decide to eat them.
  • Saturday: everyone’s on their own. I’ll be gone and they will probably head to Golden Corral – their favorite place to eat when Mommy’s out of town!
  • Sunday: family dinner together after they go to church & I get home. Supper with our Small Group friends.

I’ve also made some brownies for lunch snacks this week and some baked oatmeal bars for breakfasts.

For lunch this week, I’m eating tortilla soup, made with the leftover turkey (instead of chicken).

Thinking I’ll make some more bread but waiting for a drier day – bread doesn’t do well in the high humidity. The honey-oatmeal bread turned out really, really good. A little crumbly, but tasty. I may up the moisture (or lower the flour) next time I make it. But it is definitely a keeper recipe.

What about you? Anything good planned?

My new favorite appliance

You might be surprised…

then again, if you have one, you probably won’t be.

I have rediscovered it after it sat in my garage for a few months…

well, I didn’t rediscover it.

SuperMan did.

Last Sunday. When he was looking for the cord for my deep fryer to fry some chicken. Which we never found. I took it as a sign that we were not supposed to deep-fry the chicken.

SuperMan was not to be deterred, however, and decided to use this “new” appliance to fry the chicken.

He said it was only fitting since it is what my grandma used to use to fry chicken on Sundays when we had our family dinners.

I could not disagree. If it was good enough for her, it was certainly good enough for us.

And thus, the new appliance made its way into my kitchen and into my heart.

What an awesome little worker it is!

Tuesday night, I used it to make fajitas (pictured below) and it was awesome! Bigger than most of my skillets and hot as can be. I loved being able to set it to “warm” and wait for SuperMan to come home to eat with us.

IMG_0650[1]

Look at it.

In all it’s Harvest Gold glory.

Isn’t it beautiful?

It makes me remember my grandma when I cook – I imagined her standing over me smiling as I cooked the fajitas… chuckling to herself that I had just now figured out how cool this little cooker was.

Don’t worry, Grandma. It’ll get lots of use now.  I promise.

Now I just have to find some more recipes to cook in it.  I’m in love.
