Menu Plan Monday ~ 13 December

Oh, the weather outside is frightful…

…and that means I’m planning warm, hearty and filling meals for my family this week.  Especially SuperMan, as he recuperates from surgery and braves the frigid temps at work. Stubborn man refuses to stay home and rest.

So, I will keep the ‘home fires burning’ and have a hot meal waiting for him in the evenings.

Here is what’s on tap this week:

  • Sunday: Baked Chicken, fresh green beans with new potatoes, carrots, rice and gravy
  • Monday: Pork Butt BBQ, sticky rice, raspberry vinaigrette salad w/ pears & gorgonzola
  • Tuesday: Rotel Chicken Pasta bake (Big Girl’s request, made with leftover chicken)
  • Wednesday: Chili with all the fixins
  • Thursday: Beef Strognaoff w/ egg noodles
  • Friday: Rib Eye steaks, baked potato & salad (the steaks are on sale at Kroger this week!)
  • Saturday: leftovers or eat out

Menu Plan Monday ~ 29 November

Back to reality today.

After a week of lazing about at Mom’s house, it’s back to the regular routine.

I made a monster shopping trip on Sunday afternoon, restocking on all the perishables and produce/dairy that had gone bad while we were out of town. That necessitated a cleaning out of the refrigerator (thank you, SuperMan, for doing that for me!) and some planning for the week’s meals.

I put a crock pot on to cook with my beef vegetable soup – that will be lunches this week for SuperMan and me.

I also baked a Brown Sugar cake, but with a twist. I added a scoop of protein powder (and upped the water to 3/4 cup to compensate) and used a Spice Cake mix as the base instead of a yellow cake mix. YUMMINESS.

I am also planning to stick some oatmeal in the crock pot – trying out Alton Brown’s recipe for Overnight Oatmeal. It looks yummy.image

Here’s what I have planned so far this week:

Monday:  Spaghetti and meatballs, salad & garlic bread

Tuesday: I’m thinking of whipping up some sort of chicken/pasta dish

Wednesday: Meatball subs & salad

Thursday: not sure yet…I’m cooking dinner for a friend whose little one is having his tonsils out. Whatever I cook for her, I’ll just double and have some for us.

Friday: dinner out

Saturday: homemade chicken pot pies

Menu Plan Monday ~ 11 Oct

Happy Monday!!

I am so loving this fall weather. Makes me feel so alive and so much like baking and creating. 

Busy week in our house this week – the girls had a break from dance classes last week, but we’re back on the normal schedule this week so we will be busy. I’ve got some comfort foods planned and hoping to find time to do a little baking as well, but we will see.

Here’s what’s on the menu for us this week:

  • Country Fried Steak & Gravy
    I use cubed steaks for this and cook them low & slow on the stove for about an hour. Makes a really tender steak. I’ll serve with some mashed potatoes and veggies.
  • Chicken Fettuccine Alfredo
    This is one of Big Girl’s favorite meals and comfort food for me. I make it the easy way – I use Paul Newman’s Garlic Alfredo sauce (I watch for it when it’s on sale and stock up) and whole wheat noodles.
  • Sesame chicken bites
    One of my go-to easy recipes that the kids love. I’ll serve it with some baked french fries and fruit.
  • Salmon Croquettes
    SuperMan loves the leftovers for breakfast sandwiches.

And, well, I don’t know what else.  I’ll see where the week takes me, I guess, but this gets me started. I’ll probably toss in some chili or a crock-pot meal in the mix but I will wait to see where the week’s agenda goes.

Menu Plan Monday ~ 4 Oct

I’m not going to be cooking much this week.  That is because I spent a lot of time cooking this past weekend. We had company all weekend and dinner guests Sunday night – I cooked several big meals and we’ll be enjoying the bounty of leftovers for a few days.  I love it when that happens.  I love cooking, so it’s not a chore to me, but it is really nice when you cook a little extra and can take a break – especially after a marathon cooking session.

Here’s what we have planned for the week:

  • Monday: Rotel Chicken Pasta Bake (leftover from Sunday night)
  • Tuesday: Spaghetti (leftover from Sunday lunch – may make this into baked spaghetti to mix it up a bit)
  • Wednesday: Chicken and Dumplings (using leftover chicken from the 2 5-lb chickens I grilled this weekend)
  • Thursday: Crock Pot Chicken Parmesan (using leftover spaghetti sauce from Sunday)
  • Friday: BBQ Ribs & baked acorn squash

That should take us through the week quite well.  I have no idea what we will do Saturday night – SuperMan and I have plans and so the kids will probably do something easy like pizza.

Menu Plan Monday ~ 27 September

I bet you thought  I wasn’t going to post a menu plan today… didn’t you? Since I posted on another topic this morning, you probably thought I was slacking off… Well, it would be understandable given the fact that I got home from out of town last night and had no clue what was in my fridge and pantry.  But a quick survey remedied that.

Here’s what I’ve got planned for the week:

  • Tonight: Beef Stew (grilled cheese sandwiches & chicken noodle soup as “plan B” for the monkeys if they don’t eat this – but they’d be crazy not to.)
  • Tuesday: Tacos
  • Wednesday: Pork Butt in the crock pot, sticky rice (from the drippings) & veggies
  • Thursday: TBD – something chicken, though
    (Maybe BBQ Dry Rub chicken  or Beer Can Chicken if the weather is nice and I can grill)
  • Friday: leftover pork butt transformed into BBQ sandwiches
  • Saturday/Sunday night we have company – both nights – so I don’t know yet what I will cook. Still thinking about it but I have time.

Menu Plan Monday ~ 20 September

mealplanmonday_v2Planning out this week’s menu wasn’t too difficult. 

I knew I wanted something special on Tuesday (it’s my birthday) and then I had a list of recipes I’d flagged from other menus I’ve seen – so it was just a matter of pulling it all together into a single list.

Big Girl is home sick today so I think I’m going to change my original plan and make some soup for tonight’s dinner.  Here’s what’s on the agenda for the week:

  • Pasta Fagioli (this is major comfort food for me – my grandma used to make this)
  • Grilled steaks, boiled & buttered potatoes, steamed broccoli (This is my birthday dinner)
  • Stir Fry Chicken (a friend made this for us for dinner Sunday night – it was yummy)  I’ll make this with whole wheat pasta and maybe add some more stir-fry veggies.
    She also made this for dessert – it was sooo good. I will be making it here at home as soon as I get the ingredients. I think I can make a sugar-free version that would be just as good. If you like Reese's peanut butter cups, you need to try this. It tastes like a cold, pudding version of a peanut butter cup.
  • Meatball Subs (I’ll make a variation of this recipe and let the girls help me make the meatballs. I think they will like that.) Cheesy Volcano Meatballs

Friday, we will be eating out and the weekend will be filled with SuperMan’s high school reunion activities.

Menu Plan Monday ~ 30 August

Happy Monday, everyone!

This week will be an interesting one for us. SuperMan is going on a new work schedule and won’t be home until after 7 each night (boo!) which means that the girls and I will be on our own for supper most nights. This will be a challenge for me. What to cook that the girls will enjoy/eat and will still be appetizing for SuperMan when he gets home…

Here’s what I have planned for the week:mpm-1

  • Twice-baked potatoes with a salad
  • Chicken Parmesan
    This will be a new one to try on the kids. I don’t know if they will like it or not.
  • Steaks cooked on the grill with fresh veggies and buttered potatoes
    This is usually a SuperMan-cooked dinner. It will be interesting to see how I do cooking steaks.
  • Pizza Braid
    I saw this recipe last week when I was perusing other Menu Plan Monday posts. Have to try it.
  • Sloppy Joes with homemade french fries & fresh fruit
    Kid-friendly & fast – good for one of those nights we have dance classes.
  • Chicken Pomodoro
    I have had this on my list for two weeks and haven’t made it yet. Maybe this week?

Menu Plan Monday ~ 23 Aug

mealplanmonday_v2 Got lots going on this week.

So glad I have planned out my menus. We have dance classes on Monday/Wednesday and Friday this week, plus curriculum night/PTO on Wednesday night and a knitting session for me on Thursday evening.

Without the plan, I think we would devolve into eating a lot of junk and fast food. This way, I know my family is getting healthy food and I can control fat, protein, and portion sizes.  Not to mention we have great leftovers for lunches.

As you can see we’re back into the chicken routine.  I’ve been finding chicken thighs on sale at the grocery and substituting them for the breasts in menus where I can. They are juicier than breasts and easier for my tummy to digest. The rest of the family doesn't seem to mind, either.

I’ve included links to all the recipes since so many of you have asked me for them.  Most are mine, a few other folks’.  All are posted on AllRecipes.com so it should be easy for you to access and print.

Menu Plan Monday (or, Tuesday)

I have been planning my family menus for years – probably since the time Little Bit was born.  I have been a fluttering FlyBaby for about that long, trying to get myself on plan with the Fly Lady (but it never seems to “stick”). However, one thing I love about her whole thing is the idea of planning ahead. I am a planner. I love my lists and my plans. So, that part works for me.

So, I’m joining the bandwagon. Want to join with me? It’s super easy. Figure out your meal plan for the week – what will you be cooking for your family?

Write them down – you can even share in the comments here if you’d like – and link them to the linky on orgjunkie’s blog.  It’s been fun looking at other people’s meal plans – and has given me some ideas for next week’s menus.

Here are the meals I’m cooking this week:

I’m sure we’ll eat out once – usually on Sunday after church.  So, with leftovers, that should carry me through the weekend.

I use AllRecipes a lot – you will see that a bunch of these recipes are linked there.  I love that I can create my own recipes and store them there as well.
