If anyone had told me a year ago that I would be 100 pounds lighter, healthier, and happier, I would never have believed them. Losing 100 pounds seemed like an impossible dream, and health and happiness, well, I thought I had those – even though I had no idea just how much I had to gain. So here I am nine months post surgery and feeling like a totally new person. I am learning to love my "new" self and to treat myself with kindness and respect and not disinterest and neglect. It's amazing the changes you go through as you shed the weight. It's not just body fat you lose.

My Day By the Numbers
I finally got around to doing my first prompt (not the first prompt, just the first one I’ve done) on Shimelle’s True Stories class. Life has been so busy, I haven’t even had time to read the prompts, much less write the responses. But I am determined to do them – I love her classes and always find such inspiration – both for my writing and my scrapbooking – when I take them.

Game Night
On Friday, Big Girl was under the weather. She had a virus and a nasty fever and spent the day at home. Saturday she was a little better but still not feeling great. However, she was feeling good enough to get “cabin fever” from being at home with little to do for two days except watch TV and rest.
So, we broke out the board games on Saturday night and played Scrabble together.
What started out as four separate “teams” turned quickly into two “teams” playing. What was interesting was how hard it was to make words even when we had fourteen letters to use (instead of the usual seven). You would think it would’ve been easier. But, when you have six “A’s” and few consonants, I don’t think it matters much.
We had a good time, though. I was very proud of the girls’ spelling ability and their creativity in coming up with words. SuperMan’s creativity was impressive, too – especially his “creative spelling” on a few words.
I’m looking forward to more game nights this winter.
Menu Plan Monday ~ 8 November
Well, I am getting “back in the saddle” after two somewhat lazy cooking weeks. I found myself slipping into the “pick up something to eat for dinner” habit this week and that is not where I want my family to be – for both budgetary and health reasons.
So, I got my act together and picked up the things I need for meals for most of the week. I’m also baking and making my oatmeal bars for weekday breakfasts and trying a new bread recipe I’m hoping the family likes.
- Saturday: Baked Ham with rice & black-eyed peas
- Sunday: Spaghetti & meatballs with garlic bread
- Monday: Pork loin in the crock pot with rice & veggies
- Tuesday: Salisbury steak, mashed potato & gravy
- Wednesday: homemade chicken nuggets & roasted potato wedges with a garden salad
- Thursday: slow cooker pork chops & rice
- Friday: dinner at friends’ house
I’m sure we will eat a few ham sandwiches this week for lunch and if any of these dinner plans get derailed there is always leftover spaghetti to fall back on.

More Scrapbooking
Even though Big Girl is sick with a virus and the day was busy on Friday, I still managed to sneak in a few hours of scrapbooking. Here are a few of the pages I worked on.
Surprisingly, I’m almost caught up with my 2010 photos. I have a few more occasions to do and then I can focus on preparations for Shimelle’s Journal Your Christmas class which starts right after the first of December. I did the class last year and loved how it helped me reflect more on what the holidays mean to me (and less on the commercial aspects of them) and I’m looking forward to doing it again this year and finding out what changes have occurred within me in the last 12 months. What will I focus on this year compared to last?

I actually scrapbooked this week!
Can you believe it?
I was beginning to wonder if my scrapbooking mojo had left me for good.
But, I’m very happy to report it hasn’t.
I’ve spent some of my free time in the past week pouring over scrapbook blogs and boards trying to get myself inspired again. It has been working.
I felt the itch come on slowly and begin to build. Now it’s like a case of poison ivy!
I just gotta scratch that itch!

Mid-week meal check-in
I mentioned on Monday I was planning to make meatloaf this week.
Well, I cooked it for dinner Tuesday night. It was a big hit.
I also made roasted vegetables. Loved the fact that everything went into the oven and I didn’t have to stand at the stove while my dinner cooked. Almost as good as the crock-pot.
I thought I’d share the recipes for the different menu items with you because this was a really, really good meal. Very filling – one of those nights when I actually wished my little tummy wasn’t so little so I could enjoy more.
Big Girl says that everyone at school says their meatloaf tastes awful. She said she told them you haven’t had my Mama’s meatloaf, then. *grin*
no… not THAT meatloaf!
Mama’s Meatloaf

2 lbs ground beef
2 eggs
~ 2/3 cup bread crumbs
~ 1/2 cup milk
2 tbsp dried minced onion
1 tbsp minced garlic
Houston House Seasoning or Season Salt
Glaze:
1/4 cup ketchup
1/8 cup Splenda brown sugar blend (or 1/4 cup brown sugar)
1/4 cup honey bbq sauce
1 tsp ground mustard
- In a large bowl, mix milk and bread crumbs. Mix to combine and let sit for about 2-3 minutes. You will need only enough milk to coat the bread crumbs to make a paste – maybe a tiny bit more.
- Add meat, eggs, & seasonings. Be careful not to over mix the ground beef or it gets tough. It’s gross, but I use my hands to mix this part. You just can’t do a good job with a spoon or fork.
- Mold into a loaf shape. I put mine in a stoneware loaf pan. Cover with foil.
- Bake at 350 for about an hour and a half. After about an hour remove foil and add glaze. Bake uncovered for at least another 30 minutes.
- Let rest about 5 minutes (tented with foil) before serving.
If you are making mini-meatloaves, use a muffin tin and make them into fist-sized meatballs. Bake at 375 for about 30-40 minutes. Add glaze in the last 10 minutes of cooking.

Nothing outstanding about the making of these potatoes, but they sure cook up good.
Roasted Potatoes
2-3 Russet potatoes, washed and cut lengthwise into spears or wedges.
2-3 Tbsp olive oil
Paprika
Houston House Seasoning
- In a large zip top bag, combine all ingredients. Shake well.
- Pour out potatoes on baking sheet.
- Bake at 350 for about 25-30 minutes.
- Finish on Low Broil setting for about 5 minutes to crisp up the skins.

Remember my post a while back about “the best broccoli you will ever eat?” Well, I finally got around to trying this recipe. All I can say is, “Broccoli, where have you been all my life?” This takes broccoli to a whole new dimension in flavor. Nothing like the “regular” broccoli we eat all the time. Soooo good.
Try this.

You won’t be disappointed.
