Slowing down

I’m having one of those days today – one of those days when my body is telling me that I’ve overdone things in the past week or so – one of those days when my mind won’t focus and my body won’t go.  One of those days when overcoming the sludge that surrounds me, literally and figuratively, seems like more work that it is worth.

It’s been a crazy couple of weeks – crazy month, actually. After a fun, but busy spring break week we came home to two weeks of testing for the girls, SuperMan working twelve hour days, three doctor visits and re-checks and me trying to work and take care of the home front, too.

It’s been three weeks of crazy busy days.  And I’m tired.

So, today, I’m taking it slow. Listening to my body.  Picking my battles. Taking it easier.

I’ll pick up steam tomorrow.  I’ll face the dragons then.  Today, I’m going to enjoy the little birdies on my bird feeder outside my office window and only do what I have to do.  The rest will wait.

The dirty clothes will be there tomorrow.  The pollen dust will still be waiting to be dusted.  The errands can wait, too.

First I’m going to rest, recharge and renew.

Project Life Tuesday

Happy Tuesday!

I’ve been working on my Project Life pages again… so enjoying getting back into this project.

A little background

The Mom Creative

This year, I’m doing my Project Life album digitally. I’m using Creative Memories’ Storybook Creator software and Becky Higgins’ Turquoise Edition (for the most part)  I’ve also purchased these nifty little overlays that allow my pages to look like true pocket pages (I’m loving them).

I’m planning to print my pages as a book – hopefully, it will all fit in one volume and take up less space on the shelf than the 2009, 2010, 2011 & 2012 versions which are 2 volumes (2 3” binders) each!

I used the January kit from The Lilypad for most of the elements on this page. I just love the pop of color and how it coordinated with all of the other blues and greens on the photos.

I’m also in love with the fonts – one was from Fonts for Peas from Kevin & Amanda.  (Pea Captivatingly is the bold font) And one was from the Digi Files from the Daily Digi, but I found it at The Sweet Shoppe now. I really like the handwriting script.

The last page documented Big Girl’s retreat weekend with her friends from church. She had such a great time – they got to meet Seth Condrey on Saturday night before the evening session.

Menu Plan Monday

Happy Monday, y’all!

It was a crazy busy week last week with SuperMan working 12 hour days and the girls having testing – not to mention my own busy work schedule.  This week isn’t much better, but I’m hoping to stay on top of things with my menu plans and some proactive housework today.

EIGHT THOUSAND!?!

Seriously?

A “very high” pollen count is anything over 1500.  EIGHT THOUSAND is just ridiculous.  I mean, I think anything over 5,000 deserves its own ranking above and beyond “very high.”  If “very high” is more than 1500, they should call 8,000 INSANE!

Needless to say,we’ve been doing a LOT of sneezing around here.  The rain we’ve had over the past few days has helped to lower pollen counts somewhat, but I think those little trees and flowers are just going to keep on keepin’ on and we’re in the midst of some serious pollen this spring.

The girls and I have started taking a teaspoon of local honey every morning. We’re hoping it will help us with our pollen/allergy tolerance.

One of the girls is loving this new habit.  The other, not so much. It’s a LOT of sweet to ingest first thing in the morning.  I’m kinda having a hard time with it myself.  Makes me want to take a nap after I eat it! Smile

But, if it helps, it’s so much better than taking a bunch of medicine, if it will help us.

SuperMan’s working 12-hour days again this week.  He’s working so hard right now, taking care of us girls… but we miss him a lot.  We’re so thankful for the work but wish he was home with us at the same time.

Since he’s working long hours and the girls have testing again this week, I’m planning some yummy dinners – and things that I can give to SuperMan as leftovers for his lunches –

Tuesday: Meatloaf with roasted potatoes & veggies Saturday: Homemade pizzas
Wednesday: Chicken Spaghetti (never made it last week) Sunday: lunch out & small group snacky dinner
Thursday: Pork Chops (new Pinterest find!) with couscous & veggies Sweet Treats: banana bread (if everyone doesn’t eat all my bananas!)  brownies (for lunch snacks) and maybe some new muffins I’ve discovered on Pinterest.

Menu Plan Monday

Ugh.

Is it Monday?

Sigh.

I guess that means Spring Break is over.

Back to real life again.

Good thing I took some time on Saturday to plan out my menus for the week – I think I’m going to need all the help I can get.  SuperMan is working long hours and I’ll be juggling the kids and work schedules on my own for a few weeks.  I need easy meals and want to be sure it’s tasty and healthy, too.

Here’s what I have planned – a mix of old standby’s and some new recipes to try:

Salad & Baked Potato  Crock pot creamy chicken & rice
Homemade chicken pot pie
(I may try this recipe or this one)
 Carnitas tacos (new!) with some Cuban black beans
Pioneer Woman’s chicken spaghetti (Yum) Hamburgers on the grill (this recipe looks good)
 Pork tenderloin with couscous and veggies This Chinese Pork Tenderloin looks good, too – may be an option if I don’t do the grilled pork tenderloin.

I’m not committing to what I will cook on which day. I’m leaving my options open as I see how the week progresses.  But, this is the plan at least.

Sunshine in a cake

Revisiting one of my all-time favorite recipes today.

If you haven’t tried it before, you should!

Springtime makes most of us instinctively want to clear things out – out with the old, in with the new. Out with the clutter, out with the dark tones of winter, out with the heavier foods and in with the light. Lighter colors, lighter clothes, lighter foods. This is one of my favorite things to make in the springtime.

Mom stumbled across this recipe years ago. It’s been one of our standbys ever since. It is so easy and quick to make, yet it is from scratch and feels wholesome to prepare.

I love the light texture of the cake – it’s technically a pound cake, but it is in no way heavy like some pound cakes are. This cake bakes up light and airy. The flavor is light as well – it sings of springtime, with its hints of orange, lemon, and apricot. There is a glaze in the recipe, although I never make it. My kids are anti-glaze, anti-icing, and prefer their cakes and cookies au naturel. Works for me. Less sugar to consume. Anyway, I hope you will give this a try.

The first time I made it, I thought, “Apricot? Really? Huh.” But, I am so glad I tried it. It is one of the family favorites – and one that is requested often by our friends as well. I would imagine you could substitute the apricot juice with some orange juice or even lemon juice, but I love it just as it is and have never felt the need to swap it out. I buy the six pack of the little bitty apricot juice cans in the grocery store, so I always have one on hand for the cake.  It takes about half of one of those cans in the cake and I use the rest in the glaze if I make the cake for friends.

Sunshine Cake

3 cups sugar (I use 1 1/2 cups Splenda sugar blend)
3 cups all-purpose flour
1/2 tsp salt
1/4 tsp baking soda
1/2 cup apricot juice/nectar (or you can use apricot brandy)
1 cup sour cream (do not use low fat sour cream, it won’t work here)
1 cup butter, softened
6 eggs
1 tsp orange extract
1 tsp lemon extract
1 tsp vanilla extract

Glaze:

1 1/2 c powdered sugar
1/2 c (apprx) apricot nectar
*if you have them on hand, you can zest a lemon and/or orange into the batter and glaze. It just amps up the flavor.

  1. Preheat oven to 325 degrees.
  2. Grease and flour Bundt pan or tube pan.
  3. In large mixing bowl, cream butter & sugar.
  4. Add in the apricot juice.
  5. Add the sour cream, extracts and eggs, making sure they are incorporated thoroughly.
  6. Add the dry ingredients (flour, baking soda, salt)
  7. Pour into baking pan.
  8. Bake for 1 hour and 20 minutes or until toothpick inserted comes out clean.
  9. Cool for 20 minutes before inverting onto cake plate.
  10. Continue to cool for approx. 30 minutes more or until cake is completely cool.
  11. Drizzle with glaze, if desired.

Just a Jammin’

Mom, the girls, and I made strawberry jam this week. They had huge, beautiful strawberries at Sam’s and we just had to get some… next stop was the grocery store for some jelly jars, sugar and pectin.

When we got going the next morning we decided to go ahead and make the jam.

We had such a good time together – it was a great learning experience for the girls (and me!) and they thoroughly enjoyed it, I think.

Our finished product is SOOO GOOD.  We had to have one of the jars right away, before it was even fully set.  Smile  Fortunately, we had baked biscuits for breakfast so we had something to use for a transport vessel for the goodness.  We scarfed those biscuits right down.

After a friend commented on my Facebook post about the jam, asking if she could buy some, the girls decided to sell their jam.  So, they spent this afternoon creating labels, fixing up their jars and telling everyone they knew about the jams.

What we’ve been up to

It’s been a whirlwind couple of days here at Mama’s house.  We have been shopping for Spring/Summer clothes, visited our favorite local restaurants (Spanky’s, anyone?) and I think we’ve just about hit most of the high spots.  With only one more day to go, we’ll probably hang around Mama’s and just rest (finally) on Thursday.

Which virtually guarantees that it will rain tomorrow – it’s a rule of nature: Wash your car; it will rain. Sounds like a good reason to stick around the house.

The girls and I are at Mom’s this week – enjoying our Spring Break. SuperMan came with us for the weekend and had to go back home last night for work.

On Saturday, Big Girl, SuperMan and I went down to River Street to wander and pretend like we were tourists for a little while.  We had lunch at our favorite Spanky’s – the best chicken fingers ever, Big Girl declared – and then walked along the river for a while.

Then we stopped in to River Street Sweets for the obligatory pralines and ice cream (not together, though) and stopped in a few shops to browse. I was amazed at the fact that the “stuff” in the shops is pretty much the same as it was twenty years ago when we lived here. I guess there are enough tourists that the shopkeepers don’t have to look for new things to market – the same-old-same-old seems to work.IMG_2994

Little Bit didn’t come with us. She has declared that she will not be leaving Ammi’s house unless it is for a trip to the mall or Target. I guess she has her priorities…

One last stop by to say “Hi” to The Waving Girl and then we were headed back to Mamma’s house for the rest of the day.  Sunday was all about family and relaxing.  Today, Big Girl and I are making a list of the shopping (she wants) we want to do while we’re here.  As soon as we’re all organized we’ll be off on our way again.
