Here fishy, fishy

 

I took the day off of work today – it was the last Friday before the girls go back to school and I wanted to do something fun with them. We decided to go to the Georgia Aquarium.  We had talked about going to the Tennessee Aquarium (we love it) but I decided I was not up to the 2+ hour drive there and back when I knew SuperMan had to work and I would be doing all of the driving.

So, downtown it was.  We invited our neighbor to go with us. It was fun having him along – he’s really like the girls’ honorary older brother and I think they liked sharing the adventure with him.

We had a great time – loved watching the fish – especially the whale sharks.  Here we got to ride on a conveyor belt (“people mover”) through a tunnel that went through the large tank with the whale sharks.  There were divers swimming above us (with the sharks) and the kids loved that.

Those sharks were HUGE.  I mean, like bigger-than-my-car huge.  WHALE huge. (uh, maybe that is why they are called whale sharks?!?)  Little Bit kept assuring me that they only ate plankton and that they were harmless.  She knew all about them from a visit she made in first grade with her class.  She loved being the expert in the group. 🙂

We also spent a lot of time watching the beluga whales.  They have four at the aquarium – two males and two females. All are young (even though they are also huge) and were very active and were extremely entertaining to watch.

It’s hard to watch them interact with each other and not think that there are all sorts of things they are thinking. I just kept thinking how much I wished I was like Doctor Dolittle and could talk to the animals. I’d love to know what was going through these two boys’ minds while they played with these noodles.

We also saw the Dolphin Tales show.  They wouldn’t let you take pictures in there so I don’t have any to share. But I have to say, I am not sure I would’ve been able to take pictures. I was too busy ooh-ing and aah-ing at the dolphins. It was mesmerizing.

And, believe it or not, emotional.  I got choked up watching the dolphins – their grace and beauty, and enthusiasm, for their act.  They seemed to revel in the cheers and applause. Watching them interact with the trainers was just so sweet. They seemed to have a genuine bond.

The show was short – only 30 minutes – but we thoroughly enjoyed every minute of it.

After our show, we toured the last two exhibits, walked through the gift shop and then headed home.  We were all hungry and tired (and ready to get out of the crowds) – but it was a fabulous day.  A perfect way to cap off the summer break.

 

It’s all Greek to me

 

Little Bit had a sleepover the other day – it was her best friend’s birthday and she went to her house to help celebrate.  While she was gone, Big Girl was at a little bit of a loss as to what to do. With no little sister to pester, I guess she didn’t know what she should be doing.

So, I asked her to help me in some kitchen experimentation.  Together, we made some new dishes – completely from scratch. It was fun and we made a huge mess in the kitchen – and ended up with some yummy treats in the process.

I’ve been wanting to make my own hummus for a while now. I’ve been collecting recipes and ingredients and I was ready to give them a try.  So, we pulled out the food processor and became mad scientists – mixing and tasting and mixing some more.

This is one of the recipes we started with.  And there was another one that was a source of inspiration, but we truly just made it up as we went along. (I can’t find the other one, sorry)  I think we quadrupled the amount of garlic it called for and we added some roasted red peppers to ours, too.

Our final result was truly yummy.  I was surprised that Big Girl wanted more cayenne! (and more and more and more) Her palate is truly expanding and it’s fun to see her finding new tastes that she likes – like spicy hummus!

We also made baba ganoush, which is similar to hummus but made with roasted eggplant. I had tried some when I went to dinner with my brother in June and loved it. I have to admit that my baba ganoush was not quite as good as the one I had in June, but it was pretty good nonetheless.  And, I was especially proud of Big Girl, who made this one all by herself and happily dipped and tasted once she was finished with her concoction.

After we made the dips, we decided to make some homemade pita bread. After all, you have to have something to dip into the dip, right?  Our pitas turned out to be more like pita chips than pita bread, though.  Two factors worked against us – a rainy, muggy day (which meant they didn’t rise like they should) and Pinterest (which distracted me at the crucial baking time – and I overcooked them!)

The pitas tasted really good and we’re enjoying dipping them into the hummus and baba ganoush. It’s a great afternoon pick-me-up when it’s too late for lunch and too early for dinner. Healthy fats and good protein to carry us through until dinnertime. I think we will try the pita baking another time, too, but it’s simply too humid right now to successfully bake breads.  It’s like trying to bake in a steam room. Not good.

Here is the link to the baba ganoush recipe we used.  Since I don’t consider what we made perfected, I am not going to share my own recipe just yet. If I get it perfected the way I like it, I’ll post later on. But this was our base recipe.

And here is the link to the pita recipe we used.  It is so basic and so simple, I encourage you to try it. If you have flour, salt, water and yeast, you can make pita.  And the rolling out of the little pitas is actually pretty fun.  Our recipe made about 18 pitas that were about six inches in diameter.

So, let me know if you try it out! It was so much fun to mix and drizzle and roll and bake (and taste!) with my Big Girl.  Getting the girls in the kitchen is so much fun – it takes cooking from being a chore to being an adventure… and teaches them some new skills, too!

 

I’m still here

I promise –

I haven’t fallen off of a truck in the boonies somewhere.

I’ve just been super-duper busy.  Getting the girls ready for school, working, taking care of the house and all the other things life throws at me, including SuperMan working two weeks of 65-70 hours (!) for a shutdown project.  It’s been a wee bit hectic around here.  It’s sort of like the universe is warming up for what it will be like once school starts – revving her engines, so to speak.

And so the blog has suffered.

Because, by the time I finally slow down in the evenings, I’m a little bit like Goldie Hawn in the movie “Overboard”

“buh buh buh”

Yeah, that about sums it up.

I haven’t even done a menu plan! Which, surprisingly, has bothered the girls. They keep asking me why I don’t have one and how are they supposed to know what is for dinner? Little do they know, I have no idea until about 30 minutes before I start cooking.

 

I don’t like life this way. (although I do like those girlies in that picture. a lot.)

I need my routines. and my structure.

I need to get things back under control.

Right now, I’m just treading water – nine more days until school starts.  Then, the new routines will set in and things should “settle” back down – relatively speaking.  It will be nuts then, too. Just nuts in a different way. But at least it will be somewhat more predictable.

Until then, I’m just hanging on for the ride!

I’m using the Clementine Edition of the Project Life kitoffered by Becky Higgins, supplemented by some digital extras and using up the random bits I have from twelve-plus years of scrapbooking. Some weeks are more digital than others and some weeks are full of frills and furbelows. It just depends on my mood.

This week was all about the birthday girl, so I focused most of my pictures and decorations on that theme. I used a little ribbon and washi tape to add some other elements and most of my journaling was directly on the pictures with the exception of the weekly recap, which I did on a homemade journal card (digitally).

So, without further chatter, here are the pages – (there are four of them because I had so many birthday pictures)

This is what happens

8 Years Ago

Eight years ago, my life changed forever.

Eight years ago, a beautiful, sweet, capricious angel swooped into our lives and left us all wondering what we ever did before she was with us.

Eight years ago, my sweet Little Bit was born.

You are a bright spot in my day.  You awake smiling and cheerful and always ready to seize whatever life throws your way.

I don’t know what I would do without you in my life. I love you so.

Really? It’s that time again?

I just spent most of the morning on an annual pilgrimage…

…to buy school supplies.

Really?

It’s that time already?

Sigh.

I’m not sure I’m ready.

(and yet, sometimes I can’t wait – but that depends on how restless the natives are)

It seems like summer just started, and with the exception of July 1st week, it seems like I haven’t really had a summer. I’ve been so busy!

But, I have to say, the girls are thrilled. They can’t wait to start their new schools and to make new friends and get things going again.

And our annual shopping trip is something we all look forward to. They are just like me in that buying new school supplies causes the heavens to open and choirs of angels to sing. It’s a beautiful, yet dangerous thing -the three of us in an office supply store – that’s for sure.

We’re suckers for pretty pens, fancy notebooks and any new thing that has been dreamt up to make you more productive.

It’s a little scary.

So, we are now overwhelmed with notebook paper (college- and wide-ruled) notebooks, composition books, binders and dividers, pocket folders, markers, colored pencils, glue, tape, hand sanitizer, kleenex, locker organization supplies, decorations and more.  My dining room table looks like an office supply store threw up on it. (gross, I’m sorry, it just slipped out)

There was a couple behind us in line at WalMart when we checked out. They were going on and on about how ridiculous it was to buy all this stuff for kids to start school. Snorts about buying dry-erase markers and special binders and the like. “When we were in school, all we got were some pencils and notebook paper and that was good enough for us.” Or some such nonsense.

I resisted (with great willpower) responding to their ridiculous conversation. It was obvious they did not have kids and so had no idea what they were talking about. I just kept thinking about how I’d rather spend the money and get my kids off to a good start than not.

And, thankfully, the girls were oblivious to their silliness. They were lovingly unloading their loot for the checkout lady to scan and loading it back into our buggy to take home where they would quickly open every package and arrange and rearrange a million times as they figured out what the “just right” configuration was going to be this year.

And so now we wait. And wonder. And count the days.

Which are 21, just in case you are wondering.

21 days until school starts.

Sigh.

This week’s post continues to show my catching up on June’s pages. I have the last week of June to share and this past week. The only week I’m lacking at this point is the week of July 1st, which I am waiting to work on because I am trying to decide WHAT I want to do there. I have a mini-album to complete for that mini-vacation and I’m trying to decide what pictures I’ll duplicate in the Project Life album. I’m not one of those who won’t duplicate pages or layouts, but I think I want to tell the whole story in the mini-album and then just pick some highlights to put on the Project Life spread.

I was hoping to work on the mini album last weekend, but just didn’t have the creative mojo to get started. I spent a little time Monday afternoon working on some crafty things to sort of get things jump-started so that I can (hopefully) get my mini album started.

I made the date card digitally, using a background paper resized to 4×6 and then added the date and a “sticker” that said “moments.” I like how it turned out.

I had so many pictures (over 20!) for last week – which is surprising since it was a pretty quiet week. So I made use of a lot of journaling on photos and a smaller weekly recap card.

it is muggy and hot, but the sun is shining and the storms from last week seem to be gone.

for the air conditioning and the fact that I work at home and don’t have to leave my girls when they’re home for the summer

Four-Bean Salad = YUM

In my efforts to get back on track eating-wise, I’ve been looking for some new recipes to spice things up a bit. Something new to excite my palate, yet something low-fat and low-carb to stay in line with the way I need to be eating.

I stumbled across a recipe for a bean salad on Pinterest and thought it looked pretty yummy. This in and of itself is rather remarkable because bean salad is something I would’ve never eaten a few years back.  But this one looked good and I happened to have the ingredients on hand so I gave it a try.

The results were simply marvelous. I have been munching away on this for a few days now and it only gets better with time.

As usual, I made a few modifications so I thought I’d share my recipe with you here. It’s basically the same thing, with a little more seasoning & veggies thrown in.

The combination of crunchy veggies and creamy beans is just very satisfying and the coolness of the salad is great on a hot summer day. I’ve served it alongside dinner as a side dish the last couple nights. SuperMan and I have really enjoyed it.  The kids didn’t care too much for it, but  I’m sure they will warm up to the idea over time. Their palates are drastically improving this summer and they are trying all sorts of new things. I’m so proud of them.  So this bean salad will stay on the rotation for us and I hope they’ll learn to like it in time.

Four Bean Salad

Ingredients:

1 can black beans
1 can pinto beans
1 can chick peas (garbanzo beans)
1 can black eyed peas
1 can sweet corn
1 yellow bell pepper
1 green bell pepper
2 ribs celery
1/2 Vidalia (sweet) onion

Italian dressing (about 1 1/2 cups)

Houston House Seasoning
Mrs. Dash Garlic Seasoning
salt & pepper to taste

Instructions:

  1. Thoroughly rinse & drain the beans and corn.
  2. Finely dice the vegetables.
  3. In a large mixing bowl, combine the beans and vegetables.
  4. Pour the Italian Dressing over the top and mix thoroughly.
  5. Season with about 1 tsp of the House seasoning, 1-2 tsp of the Mrs. Dash and salt & pepper to taste.
  6. Chill for about an hour before serving.

You may need additional dressing and/or salt/pepper at serving.

Houston House Seasoning

1 cup kosher salt
1/4 cup black pepper
1/4 cup garlic powder (not garlic salt)
1/4 cup onion powder

Mix all thoroughly. For storage, reuse a large seasoning bottle (I reused my leftover garlic powder jar) or a Ziploc-type baggie.
