What a week

It’s been a busy week at our house – lots of happenings for our family, especially the little one.

First, there was a lunch date on Saturday with Mommy & Daddy ~

Then, there was pumpkin carving with our neighbors on Sunday evening (Big Girl was in on the carving but I didn’t get a picture of her)

Chicken & Wild Rice Soup

My friend, Cindy, who makes the most wonderful meals, made this soup for our family one night not too long ago.  After that dinner the girls and I kept thinking about, and talking about that soup.  We just had to have more.  It was so good!

My first attempt at re-creating the soup was not quite as good as Cindy’s was.  She had used a specific wild rice blend and my homemade spice blend did not quite match.  The soup was good, but a little spicy (I think too much ginger) and the girls weren’t crazy about it.  It most definitely wasn’t Cindy’s soup and that was what they wanted.

So, I waited a week or two and went back to the drawing board… or cutting board, that is.

My second attempt was much better and was quickly gobbled up by the entire family.  As a matter of fact, ALL of the soup was gone, which almost never happens at my house.  The girls even asked for it in their thermoses for lunch.

Success!

This is a great, hearty and comforting soup. Perfect for a rainy or cool fall day.  Leftovers are great – the rice absorbs as lot of the broth but it is still very good and you can always add more broth or water if you want it thinner.  We liked it just fine with less broth and it was so tasty even two days later.

I have no picture because there was nothing left to take pictures of!  Try it anyway. Smile

Chicken & Wild Rice Soup

Ingredients

1 pound chicken (I used a combination of thighs and breasts)
water for stock pot
chicken bouillon cube
1-2 stalks celery
1-2 carrots
1 small onion
~ 1 Tbsp garlic (minced)
2 boxes Uncle Ben’s Wild Rice (including spice packets inside)
salt/pepper
Houston House Seasoning
~1/2 – 3/4 cup half and half (or milk)

Instructions
  1. Dice celery, carrots, garlic & onion.  Add to stock pot with water and bouillon cube. Bring to a boil, adding chicken and seasoning generously with salt/pepper and Houston House Seasoning.
  2. Remove chicken and shred, reserving broth.
  3. Stir the rice and seasoning packets into the broth.
  4. Add chicken back to soup and bring to a boil.
  5. About 10 min before serving, add the half and half.  Bring back to a simmer.

It’s super easy and super, super good. I hope you give it a try.

Menu Plan Monday

It’s a rainy, gloomy Monday here. The weather people said it was going to be in the 70’s here today but I really think they didn’t know what they were talking about. It might get to 70 downtown with the concrete heat island, but I doubt it will get out of the low 60’s here at home.

Rainy weather makes me want to hibernate.  And to eat warm, comfort foods. And drink tea. And sleep. Smile

I’ve been back on my meal planning routine lately. Although I have changed things up a bit to accommodate our schedule this fall.  Thursdays are always leftover days.  The girls have dance and we’re close to 3 hours at the studio on Thursday nights.  It’s also my busiest meeting day for work.  So, no cooking for me.  We eat up whatever is left in the refrigerator or we eat sandwiches.  Which is actually working out really well – less leftovers are going to the pups and more are being eaten!

I’ve also been making great use of my freezer.  We had our big cooking day back in August to kick off the new school year and I have been doing a mini version of that from time to time since.  Having those meals in the freezer ready to is such a great timesaver and STRESS saver that it is totally worth it.

What I’ve been doing is that whenever I make a casserole-type of dish, I double the recipe and put one in the freezer.  Every.single.time.  My freezer gets stocked and my family gets fed.  Twice.  Beautiful.

And, like today, when I’m fighting a head cold and feeling under the weather those faithful, frozen friends are waiting to come to my aid… so nice.

Another thing I’ve been doing is not locking myself into a specific meal on a specific day – I have been listing five or six dishes on my index cards and posting in the kitchen.  Then I can look at the list and pick whichever one suits my mood and our schedule that day.

Kittyless

Last night, my sweet Scooby cat – my companion of 21 years – went to Kitty Heaven.

She had been declining rapidly in the past few months and even more so in the last two weeks. So much so that she had become paralyzed in her lower back and back legs. And while I am glad that she is no longer suffering and will finally be at peace, I’m really going to miss her.

Scooby was one of those scrawny little kittens we adopted at the humane society – she was a gift from SuperMan and looked like this tiny little rat with big ears, big gold eyes and not much else.  She used to run around the house, scooting across the floors as fast as her little kitten feet would take her.  (Which is where she got the nickname Scooby.  Her real name was Gabriella Pussycat)

She was the senior kitty in the house for a long time. Putting up with a lot of new feline and canine additions with grace and dignity.  She would look at the newcomers like, “Seriously? Another one?!”  but she always accepted them into the fold and taught them who was the boss and who would and wouldn’t accept their playful attentions.  Our giant puppies learned to back away carefully when she walked through the room – giving the matriarch the respect she was due.

As she neared her twentieth year last year, SuperMan and I knew that we were living on borrowed time with our Scooby cat.  She had slowed down considerably and the age was showing in her fur (white appearing in the black) and in her increasingly diminishing activity levels.  In the past six months or so she had really begun to decline. She had “spells” (I think they were seizures) and began to lose the use of her back legs.  The past month has really seen a rapid decline.  We braced ourselves and the girls for what we knew was to come.

Last night, my sweet kitty finally went to her rest.  While I’m sad and my lap is cold and my house a little quieter today, I am at peace because I know SHE is at peace.

Superman, the girls and I are trying to remember the good days and the snuggles and love we got from and gave to our Scooby girl.  It’s especially hard because she was our last kitty.  My Gracie cat left us right after Labor Day.

Hug your creatures close, folks.  Love them while you can.

We are so fortunate to have these creatures with us in our lives who love us unconditionally, expecting nothing but our love in return.  They trust us with their lives and in turn give us so much.

This is the first time, I think, in my life (my adult life for sure) that I will be kitty-less.  I’m not quite sure yet what we will do, if anything, about that.  With the big galoots in the house, I’m not sure a kitten would be advisable, but the girls are already campaigning (and have been since Gracie died) for a new kitty.

I think, right now, I need to grieve and to remember my two girls.  Maybe in a few months we’ll add to our fur family again.

Right now, I’m going to go hug those galoots and be glad they’re here to keep me company today.

On the needles

I’ve been so busy this year with work that I haven’t really had much time for any type of crafting – scrapbooking, needlework, nothing.  And, honestly, I’ve been so busy that I haven’t really missed it, either.

However, things seem to be slowing down a bit at work (thank the Lord) and I am not quite at the collapse-into-bed stage in the evenings when the kids go to bed.  So, I started getting itchy fingers and looking for something to crochet or knit.  I think the ladies at the dance studio were influencing me because most of them are knitters and bring their projects to work on while our daughters dance.

I found two projects that I fell head over heels in love with  – one is a lacy scarf that I think I’m going to make into a wrap by doubling the project. (I bought double the yarn called for in the project)

The yarn I bought is full of fall colors – reds, mauve, purples – and I think it will be beautiful in this pattern.

It looks a lot more red in this picture than it really is. There’s a lot of blue-ish purple there in real life.

The second is a beautiful shawl that is inspired by Princess Kate’s shawl that she wore shopping.  I love how feminine it is – that ruffle is just beautiful.  I’m sure the original costs hundreds of dollars, but my version, based on a Ravelry pattern is much cheaper – especially since I found the yarn on sale for $2.50/skein!

The original is a beautiful forest green, but I fell in love with a navy yarn and decided that would go more with my wardrobe. Here’s what I chose:

Caron Simply Soft in Dark Country Blue

I’m loving the pattern – it is easy enough that I can remember it (mostly) even with the repeats.  It’s got a “spine” down the back with an open line and then the ruffle will be added at the end.

I am not even finished with the first skein and it calls for four (!) so I will most likely be working on this project for a while.  I have been trying to spend an hour or so a day working on it but some days I haven’t had time to do anything. IMGP4822

I am in no rush, though, and I am really enjoying the project. You can follow along with me on my Ravelry page.  One thing to note is that the pattern on the website is incorrect and the author notes on Ravelry that you can email her and she will send you the corrected pattern. I did that and received a return email within a few hours so I didn’t have to wait to start my project!

Autumn Adventures

Last week the girls had two half-days and one holiday for their end of term “break” and so we took off for the mountains as fast as we could go.  We headed to our favorite spot – in North Carolina near the Cherohala Skyway. We stayed at a cabin that we’ve stayed in before and met Mom and my stepdad for the long weekend.

On Thursday, it was rainy and cool so we spent most of the day at the cabin listening to the rain and relaxing. It was a lazy day and one we very much needed.  We spent a lot of time right out here on the porch enjoying the rain and yet staying dry.

On Friday, the day dawned cool and crisp and so SuperMan and I decided to take the girls to the Joyce Kilmer Memorial Forest for a hike. It is a wilderness area so the trails are rustic and rough, but it was a beautiful walk through the woods.

SuperMan and Big Girl led the way as they’ve been there a few times on previous trips.

The streams rushing along the paths were so beautiful and soothing.

Big Girl shot a “selfie” and got both of us as I walked up into the picture by accident. I like it, though. Not sure why she likes the lopsided angle, but a lot of her selfie shots are that way. Must be a teenager thing.

Along with the very big trees there were very big leaves which doubled nicely for bunny ears.

Little Bit and I got tired on the hike and headed back to the base camp early while SuperMan and Big Girl finished up the route. We propped our (tired) feet up and relaxed in the sunshine by the stream while we waited on the others.

After we left the Joyce Kilmer Forest, we headed up to the overlook above the trails. IMG_4018

SuperMan was keeping me warm. It was breezy (and cold!) up there.

Then we headed over the pass for a ride along the Cherohala Skyway.  As always, it was beautiful.

On the other side of the Skyway is Tellico Plains, TN.  As we drove along towards Tellico Plains, we passed the Tellico river. It was absolutely beautiful and so after we ate some barbeque and headed back over the Skyway to the cabin SuperMan stopped so that I could take some pictures of the river.  My scenic photography was interrupted by two goofballs who decided to be in the photos …

Things I’m loving right now

  • Cool mornings with foggy pastures
  • Seat heaters (for those cool mornings) which make you not want to get out of the car.
  • Palmiers and hot tea – so addictive.
  • Children who place their lunch “orders” the night before to make morning prep easier – It’s so nice at 5AM when you already know what lunch needs to be and you’re not having to try to be creative when your brain is not awake.
  • Cuticle therapy cream – makes my dry hands feel soooo good.
  • iOS 7 – so bright and pretty!

  • Heating pads and Aleve – when you’ve had a headache for a week +
  • Puppies who keep me company during the day

Menu Plan Monday

Happy Monday!

It’s a busy week in our house this week – two birthdays and lots of other things going on.  I’m hoping to keep our dinners simple, or at least as crock-pot-based as I can. That way, I know we’re eating well even if I don’t have the time to spend in the kitchen every single afternoon.

I’ve also decided that I want to try some of the bajillion recipes I have on Pinterest. So, this week is experiment week. I’m breaking out of the “tried and true” and trying new versions of favorites and some new recipes to boot.  This will either be a rousing success or an utter failure.  My family has taught me that they really love my old standby recipes and don’t like me messing with them very much.  But I like to spice things up (so to speak) and try to cook restaurant favorites that we love at home. It’s cheaper and healthier!

Today is SuperMan’s birthday. We’re going to enjoy some crock pot Mongolian Beef and rice tonight.  I’ll steam some broccoli to go along with the rice and beef and I’m baking an apple cake and plan to pick up an ice cream cake (his special request) for our dessert.

Tomorrow, I’m thinking I’m going to try this Crock Pot Creamy Italian Chicken recipe. It looks really good to me – it’s not 100% crock pot – there are parts you have to do outside the crock pot (like cooking the pasta), but it looks really good. I am thinking I may serve it with the salad and garlic bread exactly as she shows it on the website.

We love, love, love, fajitas.  We usually have them on Friday nights at our local favorite Mexican place. I’m thinking that maybe this Friday I’ll try this recipe for oven-baked chicken fajitas.  Of course, my girls are meatasauruses, so I may have to edit things and add some steak into that.  Just chicken would be healthier, but I think there would be squawking from the peeps if I don’t.

One more new recipe to try – not sure if it will make it into this week or next, but it sure looks good. The girls and I love Panda Express. It’s one of our Saturday lunch treats. The only thing about it is that sometimes it’s a little bit too spicy for our delicate palates. So, when I found this recipe, I decided it was a must-try. I can adjust the heat to our preferences and still get that yummy Orange Chicken that we enjoy so much.

I can also finish up the green onions I bought for Monday’s dinner and make some fried rice to go along with it with the leftover rice from Monday. I love dinners like that!
